Rainbow Cupcakes
Before PRIDE Month is over, I wanted to share my crappy photos from the first time I made Rainbow Cupcakes.
Most of the recipes I post here will be made from scratch. The first time I made Rainbow Cupcakes, however, I made them with my nieces for St Patrick’s Day. We used store-bought white cake mix, split the batter into 6 cups, and added food coloring.

We ended up spooning the batter into the cupcake liners in layers. The made-from-scratch version I will post later on, I used a piping bag to get thinner layers.

I topped them with canned frosting and rainbow sprinkles and called it a day!. They were pretty and delicious. Cut open, you can se how the batter rose on the sides as it baked.
